SKOL! Chef Will Ross is returning to the HKS Kitchen to bring you another delicious evening packed with the cozy, comforting flavors of Scandinavian-inspired cuisine. In this unique cooking class, you’ll experience everything from bright pickled vegetables to  delicate seafood and warmly spiced dishes with elegant seasonal summer touches. You’ll begin the evening with a taste of chef’s traditional-style Pickled Fish and Vegetables (syltede fisk og grøntsager), a delicious balance of acidity, sweetness, and fresh herbs. For the main course, you’ll learn to cook Walleye with Spicy Lemon Cream Sauce (sandart med krydret citroncreme) to pair with a fragrant side of Curry Rice (karryris) that adds warmth and depth to the plate and a Wine Pairing from The Wine Shop at Honeycomb. To finish, you’ll create a beautifully crisp Pear, Honey, and Brie Strudel (pære-honningstrudel med brie) that combines sweet fruit, creamy cheese, and flaky pastry into an irresistible dessert. Throughout the class, you’ll explore Nordic flavor traditions while building skills for creating refined yet comforting meals at home. Recipes will be provided. Tickets are priced per person. Must be 21+ to attend.

MEET THE CHEF

Will Ross began his adventures in food and beverage in 1986 as a grill cook at Jack in the Box in Dallas, TX. Since then, he has performed every job within the restaurant industry from dishwashing to ownership, as well as pursuing advanced studies in wine and cuisine.  Ask his friends and they will tell you he knows a lot about libations, especially when he is drinking them! Will has enjoyed a career spanning decades, hosting presidents, celebrities, and most important, everyday folks. They mean the most to him. He has always maintained the philosophy that restaurants, food and wine are about people- create a good culture and a good product you will make guests out of customers and friends out of guests.
