with Helen Lampkin, founder of My Brother's Salsa and Helen's Table
Roll up your sleeves and join Chef Helen Lampkin in the HKS Kitchen for a class that celebrates the art of making authentic corn tortillas. To set the tone, you’ll begin with a Creamy Corn Dip paired with crisp, warm Corn Tortilla Chips. Then, Chef will guide you through essential techniques – mixing, shaping, pressing, and how to cook your scratch-made tortillas – using both blue and white masa while exploring the rich traditions behind them. Once you've honed your tortilla-making skills, you'll get to enjoy them paired with a chef-made Pork Picadillo Taco Filling and garnished with traditional toppings like Mexican Crema, Cotija, and Salsa. The evening will conclude on a sweet note with Chef Helen’s Hoe Cakes topped with Poblano Syrup and Toasted Pecans, tying together the versatility and flavor of corn in every course. Recipes will be provided. Tickets are priced per person.
*All class ticket sales are final. No refunds or credit transfers to other classes are available. If you purchase a ticket and are unable to attend, please contact us to check our waitlist.*
