Indulge in the rich, comforting world of gluten-free baking without giving up butter, nuts, or flavor in this hands-on baking class. With Chef Miranda in the HKS Kitchen, you'll get to work with several gluten-free flour alternatives – buckwheat, white rice, oat, and almond flour – all while learning how each one works best in baked goods. You’ll start with warm, tender gluten-free sweet potato biscuits served with maple butter before exploring the nutty depths of a buckwheat and hazelnut browned butter cake topped with luscious chocolate cream and fresh citrus. To finish, you’ll craft a rustic apple-cranberry almond tart crowned with honey whipped cream. In this class, you'll boost your gluten-free flour powers and discover that gluten-free baking can be every bit as indulgent, aromatic, and satisfying as the classics. Note that while this class is gluten-free, it is NOT dairy-free or nut-free. Recipes will be provided. Tickets are priced per person.

MEET THE CHEF
Miranda graduated from the French Pastry School in Chicago in 2005. Her pastry career began at NoMI, a Michelin-star restaurant in Park Hyatt’s flagship property on Michigan Avenue. It continued at Goddess & Grocer, Hoosier Mama Pie Company, and The Bristol. In 2015, she, her husband, and their dog Doc, relocated to Northwest Arkansas. Her introduction to the NWA culinary scene was at The Farmer’s Table in Fayetteville, where their passion for local products and support of area farmers shaped her perspective on food and cooking in her new home. If you’re a fan of beloved local spots, there’s a good chance you’ve been introduced to her pastries and baked goods. Miranda has created desserts for Pressroom, The Hive, and baked pies at Wright’s BBQ. Currently, she consults on the dessert menu at Conifer in Bentonville.
