SKOL! Chef Will Ross is returning to the HKS Kitchen to bring you another evening packed with hardy Nordic dishes that highlight a combination of the region’s savory, sweet, and pickled delights. Throughout the evening, you’ll explore the rich, comforting flavors of Nordic cuisine, beginning with delicate gravadlax – cured salmon – served alongside earthy mushrooms and tangy pickled onions on rye toast. Then you’ll move on to make a hearty main course of Æbleflæsk – a traditional Danish pork dish paired with sautéed apples, cabbage, and onions that perfectly blends sweet and savory notes. And you’ll finish with pickled peach clafoutis, a unique custardy dessert that offers a bright, lightly tangy end to the evening. Come get a taste of the ingenuity and simplicity of Nordic cooking along with an earful of tales about how Chef Will’s grandmother inspired the dishes he shares with you. Recipes will be provided. Tickets are priced per person.

MEET THE CHEF
Will Ross began his adventures in food and beverage in 1986 as a grill cook at Jack in the Box in Dallas, TX. Since then, he has performed every job within the restaurant industry from dishwashing to ownership, as well as pursuing advanced studies in wine and cuisine. Ask his friends and they will tell you he knows a lot about libations, especially when he is drinking them! Will has enjoyed a career spanning decades, hosting presidents, celebrities, and most important, everyday folks. They mean the most to him. He has always maintained the philosophy that restaurants, food and wine are about people- create a good culture and a good product you will make guests out of customers and friends out of guests.
