Then, jump in for the hands-on portion where you’ll create a light and refreshing parmesan salad, the perfect complement to your main dish: lemon ricotta polenta topped with roasted cauliflower, pine nuts, raisins, and capers. MEET THE CHEF:
Chef Brittany Eddelbuttel, small business owner of Eddelbuttel Nutrition and faculty member at Brightwater, is a Registered Dietitian and holds a master’s degree in human nutrition. Chef Brittany is originally from New South Wales, Australia and has lived in Bentonville for 20 years. Chef Brittany completed her AAS in culinary arts at NWACC, completed her undergraduate degree in dietetics at the University of Arkansas, and competed her Master of Science at the University of Alabama. Brittany enjoys working alongside skilled professionals and being an educator and mentor to both students and the community. Chef Brittany specializes in easy and nutritious meals that anyone can do at home. In her free time, Brittany enjoys spending time with her family, gardening, frequenting farmers markets, and dining at local restaurants. Chef Brittany is the owner and founder of Eddelbuttel Nutrition; offering convenient Telehealth nutrition counseling, meal planning, meal preparation, and private cooking lessons.
