with Maudi Schmitt of Cafe Rue Orleans

It's time to spice up your brunch so join us in the HKS Kitchen along with Chef Maudie Schmitt!  Chef Maudie, a NOLA native and founder of the iconic Cafe Rue Orleans, will share some of her tricks of the trade as she brings you a brunch with all the Cajun flavors.  In this class participants will enjoy the perfect Cajun Bloody Mary along with a selection of garnishes upon arrival to get your taste buds ready to go.  In the hands on portion of the class, Chef Maudie will teach you how to make her delicious Pontchartrain sauce.  Next, guests will batter and skillet fry up crab stuffing to make crab cakes to make Egg Pontchartrain, the Cajun version of Eggs Benedict. Chef Maudie will also lead an instruction on how to poach the perfect egg - a great skill for any brunch dish! Brunch plates will be served with jazzy potatoes for an additional Creole kick. Recipes will be provided.

MEET THE CHEF:

Born and raised in New Orleans, Chef Maudie Schmitt has an extensive restaurant heritage and learned to cook from the many great chefs in her own lively family.  She taught special education for 23 years until deciding to open a restaurant.  Cafe Rue Orleans opened in 2001, and has been blessed with much success in the NWA area.  Chef Maudie recently competed on Food Network's Supermarket Stakeout where she was a runner up!
